Description
A bright, tea-like Ethiopian micro-lot from the Gedeb washing station — bergamot and jasmine over a soft peach finish.
Origin
Gedeb sits at the southern edge of the Yirgacheffe zone, where 412 smallholder families deliver ripe cherries by hand to a single washing station. Cherries are floated, depulped and fermented for 36 hours before drying slowly on raised beds for 12 days. The result is the archetypal Yirgacheffe cup: floral, citric and utterly transparent.
Brew recipe
Filter V60 · 15 g : 250 ml · 94°C · 2:45 total. Bloom 40 g for 40 s, then three pours of 70 g.
